NO MORE TURKEY!

Well, our long weekend is coming to an end.  I have to say it has probably been one of the best Thanksgivings.  Chris and I got to spend our very first holiday in our new home.  We were lucky enough to have two Thanksgivings, the only down side is, I don't want to ever look at another Turkey, or stuffing, or mashed potatoes, or green bean casserole ever again!  Although I am not entirely hungry, after consuming more food this weekend than I did all week, I felt like I needed to cook something more fresh for dinner tonight.  To some this may not constitute as "fresh" as it still has the carbs and protein that our Thanksgiving dinner had, but it's got a red sauce!  That is what makes this meal so different and tasty after a weekend of Turkey.   PLUS, it's SUPER EASY!  Once again, I found this recipe on Pinterest.  I've seen the photo of the dish come up several times and it stated it was the "END OF CHICKEN PARMESAN AS YOU KNOW IT" Well, the cook may have been right, it is pretty tasty and their is no grease splatter which is alway a bonus. So here it is, if you are looking meal that has nothing to do with Thanksgiving, yet is still comforting on this cold day (if you live in Minnesota that is), then you should definitely try this!  Hope you Enjoy!

Here is what you will need....

2 tbsp Olive Oil
2 cloves Garlic, crushed (I used 3 because I love garlic)
hot red pepper flakes, to taste ( I did not have any and therefore did not use them, although I'm sure it         would have been tasty, it still was amazing!)
6 boneless skinless chicken breast (I could have probably fit 8 in the pan)
2 cups marinara sauce
1/4 cup chopped basil (fresh is best, but you can use dried if you want, just not as flavorful)
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

Preheat your oven to 350 degrees
Place olive oil in baking pan, sprinkle crushed garlic over olive oil
Place chicken breast in pan, ( I then sprinkle with salt and pepper, this is when you would add the Hot red pepper flakes if you have them)
Then sprinkle half the mozzarella cheese over chicken and half of the parmesan cheese over chicken
Add the Garlic Croutons, sprinkle the remaining cheese over the croutons
Place in oven and bake for 35 to 45 minutes until chicken is done
Let sit for 10 minutes, serve as is or over a bed of pasta and Enjoy!

INGREDIENTS


OLIVE OIL AND GARLIC, THEN ADD CHICKEN...

Add tomato sauce, any kind will do, I like mine saucy! :)

Add Mozzarella Cheese and Parmesan Cheese


Add Garlic Croutons and Sprinkle the remainder of the Cheese over top!

Bake at 350 degrees for 35 - 45 minutes until Chicken is done.


Serve over a bed of pasta and BON APPETITE!
